THOUGHTFUL SOURCING

When sourcing wild-caught fish, Wulf’s prioritizes domestic alternatives whenever possible in recognition of the strict monitoring and regulation of US fisheries. Only a very small percentage of the wild-caught seafood we offer is caught outside of North American waters.  

We champion regenerative aquaculture like shellfish and kelp which improve the water they are raised in, as well as nurturing a new fishery to support a culinary solution to invasive and highly destructive green crabs in our local waters. 

Reputable third-party certifications and ratings, like Aquaculture Stewardship Council (ASC), Best Aquaculture Practices (BAP), European Organic certifications, and Marine Stewardship Council (MSC), inform our purchasing decisions.  

EDUCATION  

In a continuously evolving seafood landscape, education is the key to supporting products and producers that are on the right path. We invest in educating our team on the products we carry and the latest information on sustainability so they can pass that information to their customers.  

We also create educational opportunities for our customers to engage with the products and ask questions. 

REDUCING WASTE

Key to the sustainability of our food system is making the best use of what we have. We work to reduce waste throughout the supply chain, from the boat to processing.  

We take a “whole net” approach to the fish we offer, promoting species that are landed as bycatch alongside more popular targeted species. These fish would go to waste without a willingness to promote them and the openness and creativity of the chefs who put them on the menu. 

We leverage our skilled cutting team that’s butchering fish by hand to create as little waste as possible when they fillet. And they carefully create cuts like collars and chops that make use of parts of the fish that otherwise would go to waste.  

Some processing waste in inevitable, and we ensure that is used as well. 98% of our fish waste after processing, or gury, is diverted from the landfill and upcycled to new uses as pet food, bait, or fertilizer. 

We’re always looking for new and more sustainable packaging options and, and we source recyclable plastic for the fish tubs that deliver product to customers.

CONTINUOUS IMPROVEMENT

Fishing may be an ancient occupation, but monitoring, stock evaluation, gear innovations, and catch methods for wild fisheries require continuous improvement. Climate change is altering wild fisheries every year, and the best producers are working to adapt to a changing ocean environment.  

If a farm is to be truly working towards sustainability, then that farm — and the farmers who run it — must be committed to endlessly adapting to new circumstances, and endlessly re-examining every part of their operation. It’s an exhausting process, but it is the bedrock of responsible modern aquaculture. We are as dedicated to this as the farmers themselves. 

Through our onboarding process with our Portfolio Products — which includes producer self-reports, document reviews, environmental management commitments, and site visits — we ensure that the producer has robust, responsible, progressive, and practical strategies to deal with challenges and keep innovating.   

TRANSPARENCY

We want you to know where your fish comes from. Every product we represent is transparently traceable back to the place it was raised or caught. In many cases, we work directly with the producers to gain in-depth knowledge of their practices.
