WULF'S IMPERIAL KALUGA CAVIAR

Bring on the luxury! Fit for royalty, this caviar is an imperial grade product with beautiful colors ranging from vibrant gold to light chocolate, and it’s truly spectacular in size. A hybrid of Amur River sturgeons Kaluga and Schrenke, this species produces a caviar with an incredible delicate and buttery flavor and sweet briny finish. We recommend pairing this with a clear Russian vodka.  

WULF'S GOLDEN DYNASTY OSETRA

The peak of beauty and luxury, this caviar is firm textured with a bright golden to light amber color. It comes from Russian Sturgeon that are farm-raised in the mountains of China. This delicacy exudes an elegant, buttery flavor that will satisfy serious caviar connoisseurs. 

Osetra pairs perfectly with your favorite Brut Champagne. 

WULF'S CALIFORNIA WHITE STURGEON

This farm-raised White Sturgeon caviar comes from North America’s largest freshwater fish. This caviar is raised in Sacramento, California in conformity with all international health, animal welfare and environmental regulations. It’s highly regarded due to its gener­ously sized pearls and fresh flavor. It’s clean on the palate and complemented by a creamy, lingering finish. 

This caviar lends itself to dishes ranging from deviled eggs to potato blinis to gnocchi. It’s also a great choice to be on its own. 

WULF'S HACKLEBACK STURGEON CAVIAR

Our most popular domestic caviar! Hackleback (a.k.a. shovelnose) is the last American wild caviar. Indigenous to Mississippi and Missouri, this small grain caviar is nearly pitch black in color. What it lacks in size it makes up for with its amazing firm texture and rich, nutty flavor.  

This caviar lends itself to dishes with burrata, smoked salmon, crab, lamb, mushrooms. Let your culinary experimentation flow.

WULF'S AMERICAN BOWFIN CAVIAR

This wild-caught ancient Bowfin (a.k.a. Choupique) yields small black roe with an occasional red tint. It is highly regarded for its intense earthy and distinctive flavor, with mild tang and hints of spice. 

This caviar lends itself to dishes with ingredients like smoked salmon, crème fraiche, and quail eggs.  

WULF'S PADDLEFISH CAVIAR

With color that ranges from light green to dark steel gray, American paddlefish caviar is comparable to Caspian Sea Sevruga in flavor, at a lesser cost. Also known as "spoonbill" because of its duckbill-like snout, the fish is caught in the Mississippi river and produces a strong, earthy flavored roe with clean brine and mineral notes.  

This caviar lends itself to dishes with crème fraiche, eggs, and potatoes.
